Ingredients

  • 1 lb Roma Tomatoes, (4 medium), diced

  • ½ Medium Maui Onion

  • ½ Cup Cilantro, chopped

  • 1 Lime (juiced)
    ½ tablespoon Hawaiin Red Alaea Salt

  • 1 Jalapeno Pepper (remove seeds and finely dice)

  • ⅓ Cup Pineapple Diced

  • 1-2 Cloves of Garlic

Directions

  • Prepare all of the ingredients
  • Combine in bowl | add more garlic and pepper to taste
  • Store in refrigerator for half an hour so flavors will mix nicely

Notes

  • Delicious with chips, this side dish has a very healthy serving of veggies and fruit. Can be kept in the refrigerator for up to three days – add to morning egg dish o breakfast burrito.
