Pineapple Pico de Gallo

1 lb Roma Tomatoes, (4 medium), diced
½ Medium Maui Onion
½ Cup Cilantro, chopped
1 Lime (juiced)
½ tablespoon Hawaiin Red Alaea Salt1 Jalapeno Pepper (remove seeds and finely dice)
⅓ Cup Pineapple Diced
1-2 Cloves of Garlic
Directions
- Prepare all of the ingredients
- Combine in bowl | add more garlic and pepper to taste
- Store in refrigerator for half an hour so flavors will mix nicely
Notes
- Delicious with chips, this side dish has a very healthy serving of veggies and fruit. Can be kept in the refrigerator for up to three days – add to morning egg dish o breakfast burrito.
